"Hi, This is Dave for Expert Village. Today we’re going to make some Cornish game hens with autumn fruits. Okay, the final step before you put these birds in the oven, is you want to add some white wine to it, it adds really extra flavor to it and all the alcohol burns off in here if you’re concerned about that. So what you want to do is evenly distribute it around, this is going to add some liquid to it, so it won’t only roast, it will also braise a little bit. That’s going to bring the liquid up quite a bit, you want to just distribute evenly around the bird, you see the liquid level will come up nicely, almost half way up, its going to add a little extra tenderness to the birds. And then you want to get some brown sugar and just sprinkle it over, not too liberally, just a little bit. This will brown the birds; add a little bit of extra sweetness to them. Nice little extra touch, little extra layer of flavor that you wouldn’t expect. "
