"Hi, this is David for Expert Village. Today we are going to make smothered chicken with maque choux casserole. So now we have the bacon all diced up and we are going to add it to our hot pan. I'm going to show you how to render this. Just go ahead and take it, spread it around out here, just go ahead and put it in there. I would just use a wooden spoon. Now whatever pan is going to fit in your oven is fine. I like to use this larger casserole type of pan. Actually a glaze here that you can use, you would get a nice sizzle. You are going to see the grease here rendering away which we are going to use for our chicken. "
