"Hi, this is David for Expert Village and today we are going to make smothered chicken with maque choux casserole. In order to prepare our fried chicken, what I want to do is get some great flavor from bacon. We are going to render this down, we also want to start with a oven proof pot. You can just pop this in the oven at the end. I don't want to have anything that has handles on it and it is going to burn. So just a little bit for you to think about. For the bacon we want to render this down and we are also going to use it later on for garnish and we would see that. So I just like to take 3 or 4 pieces of bacon and just go ahead and cut them all. We have our pot heating already so when you put this in and you can hear it sizzle, that would give you a head start so just go ahead and dice this up really well. "
