"Hi, this is Dave for Expert Village. Today we are going to make stuffed pork chops wrapped in bacon. Now while our chops are in the oven now we just decided to make a little gravy to go along with these. With the bacon drippings and the sausage drippings so here is how you do it. It looks to me to be about 3-4 tablespoons of fat in here. So what we want to do is go ahead and grab some flour, we are not going to add exactly the right amount right away, I would think. So you want to take your whisk and move this around so basically we are making a roux. It's going to be delicious, it has all that flavor of the sausage and the bacon, the veggies that we had in here so while our pork chops are baking away we are going to be doing this. We are going to add a little more flour to it, we are going to be adding some liquid in a minute. Then what I like to do is add a little chicken stock, you can actually add milk to this or half and half if you want to make it creamier. But I just add a little chicken stock, you hear that sizzle so I'm going to mix that in a little more stock and see how smooth this is getting."
