"Hi, this is Dave for Expert Village. Today we are going to make stuffed pork chops wrapped in bacon. The star of our show are pork chops, I selected the boneless pork loin chops. You can definitely use the bone in double cut they call it from your butcher. Those are awesome too these are just easier to use cause you can just slice the piece right off. But I like bone in also it adds some extra flavor. All you want to do now is these are nice and thick, these are about an inch in a half. You just want to cut a pocket in them so just get your knife like that and cut a nice little pocket just like this. Turn it around here and not all the way through just so that it's like this that is where the stuffing is going to go. The other way to do it if you don't want to do it one end go ahead and just take it from the side again you have this beautiful nice cut through here."
