"Hi, this is Dave for Expert Village. Today we are going to make stuffed pork chops wrapped in bacon. Now for our stuffing for our pork chops we are going to put about a half of pound of chopped sausage in. This is an andouille sausage it's just a little bit spicier a lot of smoke to it and this is going to be a great part of our stuffing. So I like to go long ways with this first and since we want to make it sort of small I'm going to go ahead and cut it this direction too. So we have it nice and quarter and then just go ahead go across like this so you get these nice little pieces. We are going to do this for all three, see how much easier that is once you cut it into quarters then it's really easy to cut it lengthwise like this across. Set that aside again, this is how we do it; go ahead and just grab this sausage this way go this direction turn it that way again. It's really easy to do and then again cut it cross ways."
