"This is Dave for Expert Village. Today we’re going to make Shrimp and Scallop Fettucini with a side of garlic bread. Alright, now this is for the celery, here’s how you do it and again this is going to be finely diced. I like to take off this end, you can use this for stock or whatever you want, it’s a little tough to me, but what I like to do is just again, just like with the carrot, just run your knife down, just like that. Make four or five little strips with this and this will be really finely diced when you get done. Now you get all that cut, just like that. Just trim them together and just run your knife right through and you’ll see them come out. Now what we want to do is try to make uniform cuts, just like with the carrot and just like with the onion. "
