"Hi, we're back. I'm chef Don O. and welcome to Expert Village. We're back making crab cakes. First thing I'm going to do here is make some bread crumbs. I use whole wheat bread for this particular recipe. I'm going to drop it in to the Cuisinart, break it in to small pieces, like so. This is probably more than I need, but I hate to repeat steps, so I'll have a little more, maybe extra bread crumbs. Ok, and you don't need these to be super fine, rough cut will do, because this is going in to the crab cake mix. What the bread crumbs do, it works as a binder, along with the eggs to hold the cakes together so they don't fall apart while you're cooking them. So, we'll add these to the bowl. Now, we need to do our celery, carrots and onion. These also, we just need a rough cut because we'll be chopping them up fine in the Robot Coup. Once we have the celery, carrots and onions processed, we will sautee them until tender, and then add this to the mix. Some onions are more cooperative than others. Ok, rough cut, 1, 2, 3, 4, 5, just like so. That's it on the onions. Into the machine. Carrot, again, rough cut. Same with the celery. And then we will mince these fine. Ok, we'll take a look inside to make sure there aren't any chunks of celery or carrot inside there. Looks like we've got it all. If you find any large chunks of carrot, celery or onion, just process a little more. So, from here, we're going to sautee our vegetables. "
