"O'kay next what we need to do is quickly flash these tomato slices, we are just going to go over and out on the hot pain and over to the English muffin. So we have our hot pan and melting butter and let's give us some high heat just for a minute that will do. You don't want to over cook your tomatoes, they will get very soft. You want them to maintain their shape. That's enough on one side. That's good. Now for the English muffin. Let's see if I can get these out of the pan. That's one, that's two, okay. Now a little more butter and about a tablespoon of garlic. There we go. The garlic is browning quick, that's good. Now let's add the spinach. The spinach will wilt fairly quick and with this I am going to add a little bit of salt, just a bit and a little bit of pepper, just a touch. The spinach is wilted and now we will add the cream, about a cup, no more and we are going to reduce this by half. Now while this is reducing we should drop our poached eggs, so let's do that."
