"Yummy. Okay, now we're going to prep our tuna for saute. So we have our tuna. What I did, I cut the filet in half. This was an eight ounce piece. With the sauce and the cucumber spaghetti and all that, this is a good portion. So, when I set this up on the plate, it'll actually be two portions. I'll have them separate. Plenty of tuna there, plenty of protein. So what we're going to do first, we have our tuna. We are going to spread mustard on one side, like so. You just need a nice even coat, not too much, not too little. This goes a long way. Okay? Just like so, try to get it end to end, corner to corner. There we go. All the flavors here are just phenomenal together. So, next we need our onions. Let's move these over. Okay? Spread them out like so. And mustard side down onto the onions like so. Just like that. Now, from the onions, carefully lift your tuna up. Just one side, just this side in the flour. Okay? Actually, I'm going to dust the bottom just a little bit lightly. I retract the flour remark. Okay? There's one. Pat it down in the onions, into the flour. There we go. Make sure it has a nice coating. Just a little dusting on the other end. Now the reason I want the dusting on this end is I don't want to put flesh, bare flesh, straight into the oil. It'll probably stick. So the flour will brown it better and it will move around. It won't stick meaning it'll move around. So, the tuna's ready. What we need to do now is finish off our sauce. So, we'll get to that right now. The sauce should be reduced nicely. If it is, we're going to adjust the flavors. We're going to add the tomato and green onion and it should be ready to go."
