"Now for our cucumber spaghetti, you don't want the skin on it. The skin tends to give off a bitter flavor so we'll get rid of that, peel these babies down, and at the same time keep checking your sauce. We have the heat on high so that is reducing. You want it reduced you don't want it burnt to the pan. If you burn the sauce and try to rescue it it will have a very bitter flavor. Keep an eye on your sauce while you are doing everything else. It looks like we have a bit of a rotten cucumber here but not a problem. Now we don't. Now with a grader I'm just going to grate the cucumber down to the seeds. There we go. Try to get this long strands of cucumber as possible. That's looking good. Okay that looks good now we don't have any use for he seeds so we will discard that. Now that that is done we are just about there. We will chop our basil real quick for the sauce. We're just chopping a little basil because we don't need a lot. We just need a little basil because we are not making a lot of sauce. We have our basil, we have our cucumber spaghetti, we have our garnish for the sauce, we have our onions for the tuna and shrimp for the sauce. Let's go back over to the sauce, I think it is time to put the finishing touches on that."
