"Okay, our sauce continues to reduce. I'll add a little more water. You can smell the shrimp and the tuna, which is good. You want this to concentrate. At the end, when we get to this, when we're finishing the sauce, there's going to be very little liquid here, but it will be concentrated. It will be very flavorful. So, we'll let that roll on. Now we need to dice our onion. Now, we need fine dice for this. So, very carefully, slice the onion thin, like so. Watch your thumb, watch your fingers. Just like so. And then, right through. Fine dice or, in the culinary world, known as a brunoise. Okay, there we go. Now the onions are for the tuna. This is for the garnish. What we need to do next is work on our sauce."
