"Welcome, to expertvillage.com. I'm Chef Emory, and today we're going to be doing a kosher-style salmon dinner. Let me tell you a little bit about me before I talk about the food. My background is in cooking, obviously. I have since about 1995. I went to cooking school in London at the Cordon Bleu, in Los Angeles at Epicurean. I've taken some classes in the South of France, and after that I worked as a private chef and I had my own catering company. I worked on movie sets, and I've just had a wonderful time cooking and enjoying food. And I feel so privileged to be able to share my knowledge with you, so back to the foods that we have here. Like I said, we're making a salmon dinner that's kosher style. So what that means is the basics here are you can't mix meat with dairy. You can mix fish, though, so this is going to be considered a dairy meal because we have our salmon and we're making some kasha, which is buckwheat kernels, but we're making that with butter. So we need to use some vegetable broth instead of beef broth. In addition -- excuse me -- we're going to be making some roasted garlic broccoli. Delicious!
