" For our next variation of the Spanish omelets we're going to do an open face. That's almost like a taco salad. It's really good. First we'll go with our three eggs. a little bit of salt, black pepper, and cumin. Just a little bit, just enough for the taste. We'll whip the eggs. If you want to add milk or water, that's cool; I choose not to. Once your eggs have been beaten, it's time for the omelets. Move over here. Is the pan hot?, Oh yeah, maybe a little too hot. I'm going to cool the pan down for a second. Once the butter is melted, and everything is hot, we will add the eggs. Let it set up a little bit as we stir. I'm going to go with a little more heat now. We're going to lightly stir, let the eggs set up around the edge. You can see when they're cooked; they'll turn a light yellow. Then we will get ready for the flip."
