"Now that we have our tomatoes, green onions, green and yellow peppers, and red onions cut, we're going to separate these ingredients according to when we're going to use them. We have our tomatoes and onions together so I'll have this on a separate plate. We have our green onions, and our peppers that we'll be using for garnish, so we'll have that on the side. Now we'll move on to the lettuce and cilantro; we'll get that cut really quick, and we'll be ready to make omelets. Make sure you clean your lettuce. The best way to remove the core is to slam it just like that, twist, and it comes out, very easy. We have our lettuce. We're going to use cilantro. Half a head of lettuce is all we'll need. Slice down once, chop, chop, and crosscut. Put this on a separate plate. Now that we're down with the lettuce, we'll chop our cilantro. We don't need a whole lot, so instead of taking the leaves off the stems, I'm just going to cut down about yay, that should be good; I'll save this for later recipes. Cut your cilantro up fairly fine. That should do it. We'll set that aside. Now, what we'll start to do is make our meat filling for the Spanish Omelets. Why is it a Spanish Omelets? Well, the meat is close to I guess you'd say taco meat. We have the tomato product in there, the cumin, onions. It's very nice. We'll be serving it with the sour cream and lettuce. You'll see once we're done, it's very good."
