"Hi! This is Dave for Expert Village and today we are making Calypso Pork Roast and Island Fried Rice. All right now it's time to make the all important paste that is going to go on top of the pork loin after it has been cooking for a while so that you don't already want to cook it all the way through. We are going to add this later and you will see how this goes. Here is what we need. Brown sugar will be your foundation. It is going to absorb all the other ingredients. We will put that aside. Then we want to add 2 tablespoons of dark rum or to taste or whatever you like. We are going to make a paste out of this so you will see how this goes. As I say, this is going to burn out the alcohol so that you don't have to worry about it but it adds great flavor. This is your dark rum. We will be adding your dark rum later. So now we want to have some garlic; put that right in there. It is going to add some great flavor to is. We are going to crumble up a couple of bay leaves in here. So just go ahead and feel free to crumble them, just like that. Then we want some ginger in there. It is powdered ginger. You can use fresh if you like but I prefer power in this because you are going to see how it comes out in a paste, so that is my preference. Then we are going go add some ground cloves into it; just like that. Cloves go a long way so make sure you don't do too much of that. We are also going to put some black pepper in. We already had it on our roast but you want to add a little of this in here to because that is going to add an extra dimension of flavor to it. Let's add the lime juice on top. Just like that. You see that is going to make it a little thinner and we will whisk that right in there and that is going to add that extra flavor. "
