"Hi! This is Dave for Expert Village and today we are making Calypso Pork Roast and Island Fried Rice. Okay now that we've got our pork loin already nice and brown as you can see. Turn the stove off at this point. We want to transfer this into a baking dish. I am going to use an aluminum dish now. If you have your favorite aluminum or any other type of baking dish that you like, you can put it in that. I like it in this because it is no fuss, no mess. We can just toss this, recycle it or whatever. Take this off. What we are going to do is we are going to put this in the oven right now. Ultimately what we want is an internal temperature. Originally at about 140 degrees. It will end up being a 160 at the end after the cooking process but we are going to be adding more ingredients to this, you can see. So this is a little thermometer that we use and just put it right in the roast. We want to put it in the thickest part that we use and put just right in the roast. We want to put in the thickest part and that will monitor what the cooking temperature is right there at the thickest part of the meat but ultimately as I say, we want a 160 degrees. Okay for this side of the roast which is about 4 to 4 1/2 pounds, you want to put it in the oven now for about 45 minutes. You want to keep an eye on it but that I think that is going to be plenty for this because there is going to be another part of the cooking process. You just put that right in there just like that and there it goes. "
