"Hi! This is Dave for Expert Village. Today we are making Calypso Pork Roast and Island Fried Rice. Oaky the next step in our Calypso Pork, is browning the meat just little bit on the outside, just searing it and what we want to do is season it up a little. We will start in the pan with just a little bit of oil in it. Okay so add a little oil to the pan; just coat a little bit of it at the bottom of it. Then we have our beautiful pork loin right here. We want to season it up a little bit with a little bit of salt and pepper. We will grind some pepper on the top of it. You can do the other side when this side has been browned. You just want to caramelize the outside of it so we will add a little pepper and salt to it too, just like that. Then we want to put in the hot skillet just sear it, get some of that great flavor in it. You will hear that great sizzle to it right there. We are going to leave it on this side for about a minute and half to 2 minutes. You will see the browning that occurs so you will want to turn it over to the other side and do the same amount. "
