"Hi! This is Dave for Expert Village and today we are making Calypso Pork Roast and Island Fried Rice. Okay for the Calypso Pork what you want to do is choose the pork that you like. What I like to use is a loin, which is this. You can also use the tenderloin which is a much smaller piece; it's on the underside but I find that this has much more flavor to it. What you want to do here and you can see this is trimmed nicely all ready. On the other side there is a nice cap of fat here. Now this would be good if you were going to put this on the barbecue that would keep it nice and moist. For this type of application when you want to put it in a pan, you don't want al that extra fat in there. So what you want to do is trim some of it off. So you just take your time and just take off some of that fart. Hold onto their and you can even grab some portion right there. As you can see that will come right off. You can even grab portion right there. You want it to kind of look like the other side. After we have all of this off, we will start seasoning. Just be very careful with it as you go. "
