"First we have to look over our fish, our red snapper typically will have feather bones, there would be a line for feather bones. Which we have right here you can feel so, I know we have bones there and we have a line of bones right here. So before we do anything we'll get rid of bones, what I do I just cut a little V, take the whole line of bones out. Same here just like so, no bones so we'll set the snapper aside and we'll move on. What we are going to do now is trim, slice and fry our plantains for the crust."
