"O'kay our pan is hot and the grease is heating up and the cooking?s are dripping to the bottom of the pan and we have our turkey resting. While the turkey is resting we will get the gravy together. The first thing we are going to do is add a little bit of butter, maybe a tablespoon. I will add some flavor and now I will add some flour. I am going to add about a half cup but no more. We are going to add this in with the grease, butter, and pretty much we are making a pan rue here. Make sure that you mix all the flour and grease, that is very important. You want it to brown up so we are browning it, there you go. Very nice. Okay once that is done we are going to add our tomato paste. We are going to go two tablespoons and add it quick and cook this in as well. Now the tomato paste adds color and flavor. For this particular tomato paste it will make really rich, it will give it great color and also enhances the flavor. Turn your pan around so you can cook on all corners and get everything incorporated there nicely and you pretty much want to cook the tomato paste on to the bottom of the pain. Okay. That's looking good. So now we have all the ingredients heating up on the pan for the gravy. We are going to add about a quart of water, we're going to make sure everything is thoroughly incorporated. When I add the water it will deglaze the pan and deglazing means it will release all the cooking drippings from the pan and that is all flavor so that is what we want."
