"Welcome back to Expert Village. I'm Chef Donno. We have our turkey in the oven. It's been cooking for about an hour and fifteen minutes. So let's check the temperature. We're looking for 165 or better. So, we'll check the temp. It looks good, looks ready. Check our temperature. You want to have your thermometer dead center, so you get a real, realistic temp. Okay. It's going, going, going and it's going to just hit our mark. We'll check the dark meat, which should be fine. Dark meat is well over. So, we are ready to pull the turkey out. And what we need to do, is let the turkey rest. While the turkey's resting, we'll make our pan gravy. Once the pan gravy is done, the turkey will be ready for slicing and we'll have a little dinner. So, we'll bring the turkey over here. Place it on the cutting board to rest. It's looking good, nicely browned, skin's crisp. Pull our wings out. Mm, looking good, smells good. Okay. Now we will, get rid of that, get rid of the rack. I'm going to keep the grease in here, that's going to be part of our roux for thickening this up. Okay, so, the grease is okay. What we need to do is get the pan nice and hot. Once it's hot, we're going to add our flour, our tomato paste, we're going to cook it in and deglaze the pan. I'll explain the deglazing process once the pan is ready."
