"I'm chef Danielle from Expert Village and today were making a rustic chicken and pesto pizza with some saute vegetables. The first thing were going to do is cut and marinade our chicken because the longer your meat marinades the better flavor it's going to have after you cook it after you put it on your pizza and cook it. One little tip that I have for you is the cutting board notice how it slides around one little chef tip is if you get a wash cloth or a wet towel from the kitchen and put it underneath it's going to prevent your cutting board from moving around so much which is also going to prevent some kitchen injuries. Now you just want this chicken to be in little dices little cubes it doesn't have to be perfect which is one of the reasons I love cooking at home, cooking for friends and family not every single piece has to be exact. You do want to keep the pieces of meat approximately the same size though so they can cook at the same rate otherwise your going to have some raw pieces and some piece that are to done. So I just kind of cut it in slices and then cut it again technically chef wise you want to keep your thumb back use what they call the claw maneuver so you don't chop off your fingers. So once you get all of your chicken cut up what I do is put it into a bowl and then I'm going to use my seasonings I like to use a little bit of soy sauce again I'm using a low sodium soy sauce. Just cause some members of my family and friends today it's best for them to not have so much salt, so I'm also going to use a salt free seasoning just has a blend of seasoning and if you put it into your hand and then sprinkle it over it your going to prevent from having to much spice be spilled or dumped onto your meat or veggies or whatever your doing. I'm going to get rid of that in a little bit I'm going to put a little pepper on there, I'm going to do the same with the other chicken breast mix it all together I'm going to store it in the refrigerator until I'm ready to put it on the pizza."
