"My name is Dan Head. So now we are going to add some smoking wood to the fire. You may remember our wood chips these have been soaking for about a half of hour. Let me tell your fire proof mitt is absolutely essential. Take the fireproof mitt off and I usually like to use two hands full you would probably need one at all honesty and you just drop it in there. I personally put a hand full on either side and that is it. And that is it now we are ready to smoke."
