"Hi, my name is Brandon Sarkis on behalf of Expert Village. Today I’ll be showing you how to make Beef Wellington with crushed Yukon Gold Potatoes and Haricot Verts. With the shallot, same thing as the onion, it’s a series of vertical cuts across the top just like that, just chop down like this and we’re just going to take it, there you go. Make sure you don’t chop up the very, very end of it, because that part too is very, very tough and not very tasty for that reason. And once again, if you really want to you could use the shallots in the food processor, I just don’t recommend it and I don’t like it but I’m not making your dinner, I’m making mine. Shallots are a, they’re a great complement to garlic and onions, but you couldn’t really use them on their own in place. Like you couldn’t take all the onion out of this recipe and just bring the shallots up to that same level, because they wouldn’t taste the same, it wouldn’t actually taste as onioney, shallots are pretty mild. Alright, so that’s it for the shallots and next we’re going to do garlic and let me clean this mess up and I’ll show you how to do that. "
