"Hi, my name is Brandon Sarkis on behalf of Expert Village. Today I’ll be showing you how to make Beef Wellington with crushed Yukon Gold Potatoes and Haricot Verts. Now I’ll show you what that egg was for, take our egg, crack it into our bowl here, and what we’re going to do, this is basically going to become the binder that actually holds the Wellington shut, we’re also going to use it to brush the top, give it a nice brown color. So you beat your egg till it gets a nice clear yellowish color like this. Now what I’m going to do, is I’m going to add the tiniest bit of water to this and it is going to thin it out just a little bit. I’m serious just like eight or ten drops of water, and that’s going to thin it out just enough to where it will brush evenly and that’s the egg. "
