"Hi, I'm Anne Mooney, I'm a personal chef in Orlando and Winter Park, Florida and I'm here today on behalf of Expert Village to talk about beer can chicken. Improbable as it sounds. We have here our chicken which we brined overnight in a simple salt and sugar and water solution and now we are preparing to put a rub on this chicken so that it will have some flavor as it goes on the grill. Now you can use any kind of rub you want to. You can buy them commercially or you can make your own. This one I made with paprika and salt and pepper and it will give the chicken flavor and it will give it some nice color, too, as it comes off the grill, you'll see. And we'll add a little, there's no point in not making a mess here. We'll add a little olive oil and so we'll get that rub all over the chicken, front and back, because this chicken is going to be standing up straight and it is going to cook very much, in very much the same fashion a rotisserie chicken cooks. So you want to make sure that the entire chicken is covered. Now, we're about ready to put it on the beer can."
