"My name is Brandon Sarkis on behalf of Expert Village. Today I am going to show you how to make Chicken Ala Cacciatore or hunter's style chicken. Okay so once again, exercise a great deal of caution at this point, watch out for that steam, and watch out for the grease splatter, make sure we've got a nice brown here which we do, and it's completely fine that the brown is only on one side, that is what we wanted. We're kind of searing the color and the juices, so now without making too much of a mess, we are going to add in our onions, we're going to turn our heat back on at this point, and we are also going to retrieve our garlic from earlier and dump it in here as well and we are just going to make sure that everything gets nice and broken up in here, well my onions are sticking over here, make sure that everything receives a nice coat, make sure that nothing is stuck to the bottom of the pan. Turn your heat down to about seven, and we're going to put the lid on and we are going to let this go for about six to eight minutes, until the onions are nice and translucent, we don't want to turn them brown or anything, that's why I said turn your heat down to like six or seven, so we are going to set our timer and we are going to come back in about seven minutes and see how things are going so. All right, so it's been about seven minutes, once again watch your steam, so you can see now our onions take on a nice yellowish color, a little bit of color on the edges, or garlic is softened up which means it has sweetened up significantly so now, I've got an onion over here that does not want to cooperate, there we go, so now what we are going to do is we are going to add those tomatoes in. At this point we are going to turn the heat up though to about an eight, in go the tomatoes, I'm just going to go ahead and use my handy spatula here to scrape all the tomato juice out. So now what happens, is we put the lid on it again, yet again, and let it cook for about two minutes with the tomatoes in there, looks like it needs some more pepper, and probably a little bit more salt, why not. Just another couple of minutes with the tomatoes in here with the lid on it, just to get the tomatoes to break down a little bit, so I will see you in two."
