"My name is Brandon Sarkis on behalf of Expert Village. Today I am going to show you how to make Chicken Ala Cacciatore or hunter's style chicken. Okay, so let's get started here, I'm going to turn on my burner, put it on something about a seven, eight or a nine, and we don't need our lid right now so you can move that out of the way. What we are doing now is we are going to heat up our olive oil, so the olive oil goes in the pan, out comes the trusty river spatula to make sure that we get the most of our olive oil, so look at what I just did, and you'll be able to see when the olive oil starts getting hot enough it will start shimmering so it will probably take about a minute so let's come back in a minute when our olive oil is shimmering. While we wait on our olive oil let's go ahead and season our chicken, so just a little bit of salt, and it doesn't have to be like the definitive seasoning for your chicken, this is just a, just one step because you are going season the sauce that it is in too. I like to season the protein as well as the actual cooking vessel, the sauce or the pasta or whatever it is you're actually doing it in and that just looks like I'm kind of over seasoning this, but a lot of this salt and pepper is going to fall right off in the pan so let's move some pieces around here and make sure do some nice even work here, let's see here we go, I think I've uncovered all the pieces that were covered up so let's make sure that we get those pieces really well, you're going to need your pepper, that's excellent. At this point I think our oil's going to be hot enough so let's go ahead and start cooking our chicken."
