"My name is Brandon Sarkis on behalf of Expert Village and today I am going to show you how to make Chicken Ala Cacciatore or hunter's style chicken. So moving right along the breast bone here, I'm going to turn him around, going right down the center, you know you want to make sure that you have a sharp knife for this, obviously, cut straight through just like that and cut through all the skin right there, because I am right handed let's go with the right side first, I'm just going to cut straight down, just like that and there is one half of our chicken. Now what we have don't want is the backbone in the chicken, because that part is not very tasty, so we are just going to take our knife again on the other side, and just cut straight down and we'll just cut the back out of the chicken so there's that. It makes good chicken stock, supposedly you can eat it, I don't know I'm not going to try, so that is how you explode a chicken in half. Next thing we are going to do, is we are going to separate the leg from the breast, we're going to split the two halves, so you find the little leg joint here, which is right here at the knee, take your knife and just kind of slide it down like this at which point you can see inside that joint and just find the inside of that joint which is right here, there you go, pop it right out. Now on the top half we are going to separate the uh, the wing from the breast up here, which is going to be a bit tricky, so what you are going to have to do is slice it right here, and you will see that joint right there, now once you find the joint you can just stick the tip of your knife in there and give it a little twist and it comes right out so there's your wing, there's your breast, here we have our leg and our thigh, to trim this out, we'll just find the connection where the leg connects, there's our leg and there is our thigh, that is how you split a chicken into eight pieces."
