"My name is Brandon Sarkis on behalf of Expert Village. Today I’ll be making traditional London Broil with roasted Yukon Gold potatoes and asparagus wrapped in bacon. Here you see our potatoes after a few minutes on top of the stove, so I’m just going to do now, because they don’t need to be all evenly stacked like this, is I’ll take the lighter potatoes and stack them on top of the darker potatoes because we need to make room in this pan, because in the same pan we’re going to do our asparagus. So the reason you want to put the darker potatoes on the bottom is because obviously the ones that are on the top are the ones that are going to get more color than the ones on the bottom. Since the ones on the bottom are already browned it doesn’t matter that the ones on top are the white ones, or lighter colored ones rather, and it’s also safe here, you know if you want to go a couple of layers deep that’s fine too. Let’s see if I can just get mine all to double stack, and call it a day, but I think I’m going to run out of room, out of space here pretty soon, yep it’s official, I’m out of space.
