"Hi my name is Brandon Sarkis on behalf of Expert Village. Today I am going to show you how to make a great holiday lamb rack with roasted new potatoes. For me it is about 45 minutes and I like my lamb racks or lamb to be about medium rare to medium so let's pull this out and take a look at it and see how we're doing. I'm going to assume it is probably pretty well done at this point so I'm going to hold this up and I'm going to look and I just knocked a bunch of crust off and you see the pan drippings are all coming out clear so a good way to test this is on the thick part of the lamb which would be for me down here, give it a good solid poke with a knife and the juice is coming out pink that means these are somewhere between medium rare and medium which is where I like them so that is excellent which means that they can now move on to my next step which is actually putting these on a plate. So I am going to move these somewhere a little better suited for it than sitting on a towel and set these on the oven and let's go ahead and get these on a plate."
