"Hi. My name is Brandon Sarkis on behalf of Expert Village. Today I'm going to show you how to make chopped steak with an onion garlic jus. Okay, let's go down our list of ingredients for our chopped steak. The most important thing we're going to need is one pound of ground beef. This is actually extra lean ground sirloin. You can use whatever you want. You can use eighty- twenty or seventy thirty. This is actually a ninety- ten. This is only ten percent fat. I wanted something nice and lean. If you're going to do the nice and lean thing, you're going to have to cheat a little bit and use a little olive oil and butter which I'll get to in a second. I've also got salt and pepper here. I've got about an ounce of extra virgin olive oil here. I've got one tablespoon of just plain stick butter. And what's going to happen is the reason I have to use these is because I used a much leaner ground beef. You can kind of trade it off a little bit. Like if I used the eighty- twenty, I'd probably go with only one of these or half of each of these. If I used the seventy- thirty I could fore go these completely. I like my food to be fatty and delicious so I'm going to have to replace it with this. I've got one shallot here. A shallot is kind of like a hybrid between an onion and garlic. So, you can find them at your grocery store. They're not too uncommon. I've also got one onion. Pretty good sized onion. You could use a half an onion, depending on how much onion you actually want in your jus. But I'm going to use a whole one because I like onion quite a bit. I've also got four cloves of garlic here. Just raw garlic. You don't want to use this stuff in the jar. That stuffs kind of nasty. So, just four cloves of fresh garlic. And also one cup of beef stock or beef bullion here. This is for our jus and that being said, let's go ahead and go through the equipment we're going to need for today and let's go ahead and get started."
