"Hi! I'm executive chef Asa Schoy of Gigi's Folderol. I'm here on behalf of Expert Village, and today we're going to be talking about spare ribs. So now at this point, my meat has cooled for about 5-10 minutes. Now what I'm going to do is slice it. I want to take my knife on an angle and just slice through the meat just like that. As you see nice medium, medium well. You just want to keep nice even slices on an angle because it'll look nice for presentation. With one shred, you can probably get about 2 salads worth. So what I'm going to do is take my extra and put it to the side. Now I have my cooled nice spare ribs sliced and ready to be plated. "
