"Hi! I'm executive chef Asa Schoy of Gigi's Folderol. I'm here on behalf of Expert Village, and today we're going to be talking about spare ribs. So now at this point I want to check my meat again. It's been about 15-20 minutes since the last time I checked it. I want to pull it out. See now how it's nice and caramelized on the side from the glaze. It's firm; it's exactly what I was looking for. Now I'm going to take this, put it onto my surface, and I want to let it cool for about 5-10 minutes just so you're able to touch it with your hands without burning yourself. Let it cool. It doesn't have to be a piping hot dish. It's going over a salad. If it is too hot, it could wilt the greens and make your salad look not too presentable."
