"I'm here on behalf of Expert Village, and today we're going to be talking about spare ribs. So as I keep this, you can let it go. Then what I'm going to do is now flip it and put it on this side. Sam process; let it go for about a minute to two minutes. You want to turn it just the same way you did before. So now, what this is doing is it's caramelizing the meat. It's pulling out sugars of the meat. It's going to make it sweeter. It's going to have that nice char taste to it. It's not going to have that burnt taste where you might sometimes get on a grill. At this point, as I've already flipped it. Now right before I'm going to put it into the oven, I'm going to take it, put it on an oven safe pan or as I have here a sizzle plate. What I'm going to do is take my glaze, the plum glaze, and I'm just going to brush it right on top. You want it to be a little thick. You don't want too much, but a good amount. From here, I'm going to take this and put it right in my 450 degree oven for about 30 minutes till where it's about medium to medium rare."
