"Hi! I'm executive chef Asa Scohy of Gigi's Folderol. I'm here on behalf of Expert Village, and today we're going to be talking about spare ribs. So now at this point my meat is nice and cleaned. It has the rub on it, salt and pepper. My griddle is now heated up to temp and so is my oven. Now I'm going to take this, put it on an angle on the griddle. Putting it on an angle is so I can get nice check marks on it. You want to let it go for about 2 minutes on each side. As you see, it's building a lot of smoke, so if you have ventilation make sure you have it going. A fan or something. You can also do this outside on a grill. It works the same way. Now I have it on this side. What I want to do now is take it and flip the complete opposite of what it was. On the same though. Now what this is doing is going to give me nice diamonds on the meat. Just for presentation wise so it looks nicer."
