"Hi! I'm executive chef Asa Scohy of Gigi's Folderol. I'm here on behalf of Expert Village, and today we're going to be talking about spare ribs. Well the first thing you need to do when preparing a dish is have your mis en place. Mis en place is French for everything in its place. It makes thing a lot easier for you to have everything right here instead of walking around to find things. What I have now for mis en place is my beef, my spare ribs, my glaze, I have my Asian 5 spice. I have artichoke heart and roast red pepper, which I'm going to be putting on the salad with the ribs. I have my salt and pepper blend to season. I have fresh fruit and fresh herbs. I also have the greens right here. So pretty much, I put everything together into one space so I don't have to walk around. That is mis en place."
