Well the first thing you need to do when preparing a dish is have your mis en place. Mis en place is French for everything in its place. It makes thing a lot easier for you to have everything right here instead of walking around to find things. What I have now for mis en place is my beef, my spare ribs, my glaze, I have my Asian 5 spice. I have artichoke heart and roast red pepper, which I'm going to be putting on the salad with the ribs. I have my salt and pepper blend to season. I have fresh fruit and fresh herbs. I also have the greens right here. So pretty much, I put everything together into one space so I don't have to walk around. That is mis en place."
