"My name is Brandon Sarkis on behalf of Expert Village and today I am going to be showing you how to make Gourmet French Fries cooked in duck fat. Okay so I've got my fries here. My potatoes rather that will become fries. I am going to take a dry clean towel and lay my fries just a little bit apart from each other. I'll do three golds and three whites. That is how I am going to cook them real quick and show you the different kinds of potatoes as they cook. We are going to take our towel and put it on top. We are trying to blot as much of the moisture off of these as we can because moisture and oil equals sizzling and popping, explosions and overall is a pretty bad thing. So make sure we get every side. Should just turn the once. This step is super super important. Otherwise, you will make a giant, giant, giant mess when oil goes everywhere and burns you and all that fun stuff. These are dry and what we are going to do is look at our oil and see if it is about done. We will throw these in the oil and start cooking, so off we go. "
