"My name is Brandon Sarkis on behalf of Expert Village. Today I am going to be showing you how to make Gourmet French Fries cooked in duck fat. Okay so let's go ahead and get our oil ready, so let's take our pot. We want to make sure this pot has no moisture in it whatsoever because if it does, you are going to make giant sizzling mess here. Going ahead and taking my duck fat and pour it right in here. Not all of it melted in that time frame but it's not that big of a deal. I just got some on my finger which is lovely. Just going to take a spatula and scrape out what I can. And I am going to hold onto this container because this duck fat is going to be useful after I fry these potatoes in it just this one time. So I can use it several times. So we are going to let our oil get hot and it is going to be a couple of seconds before it is ready. "
