"My name is Brandon Sarkis on behalf of Expert Village and today I am going to be showing you how to make Gourmet French Fries cooked in duck fat. I am going to show you a quick way to get your pan ready while waiting on your potatoes. We are going to take the pan that we are going to fry them in, fill them half way up with warm water and take that rendered duck fat we have and place it in there because that duck fat is pretty solid in this container. So when you warm it up, it will turn into a liquid. By the time the potatoes are done, they will be warm enough where I just take them and put them right out in the pan. That way I won't have to sit there and scrape it all out and make a big mess. This is also a way that you can use to get any sort of shortening out of a container or same thing with anything gelatinous or even with butter. A quick way to unwrap sticks of butter is to just dip them in hot water real quick and take them right out of the wrapper which is pretty neat. We are going to let this sit here, we'll keep an eye on it , I would say no more than 5 minutes or so. Just long enough to get the duck fat inside to loosen up a little bit so we can actually get it out of the container. Make sure you keep it on low though because any hotter it will actually melt the bottom of the duck fat container and melt plastic in your pan that makes a huge mess and something we don't want to have to deal with. Another 15 minutes with those potatoes and we'll get started. "
