today I am going to be showing you how to make Gourmet French Fries cooked in duck fat. So what I've done here is taken all my potatoes and I went ahead and did two different kinds so I can show you the end result. I have white ones and gold potatoes as well. I am just going to run water over them until the water runs clear. It usually takes about 3 or 4 minutes. What you are doing is rinsing all the starch off the potatoes and you can speed the whole process up by dumping the water off the potatoes. But what we are doing here is getting all the starch off the potatoes in the event there is any dirt on them. They are potatoes and they do grow in the dirt. Go ahead and dump that and what we are doing here is we are soaking them and what is going to happen is we are going to do this here for a couple of minutes until the water runs clear; probably one more time and we will be good on that. Dump this. While this fills up one last time, I am going to grab some ice because we are going to put ice on them as well. Alright, so there's that. Take our ice here; don't have to put a whole lot. Probably one tray is good. Now we are going to put these in the refrigerator for at least a half an hour. You can do this up to a day or day and half in advance and no problems at all. What you are doing is you are getting the water in the potatoes and you are rinsing all the starch off the outside because that is what cooks up first. So let's go ahead and throw this in the frig and give it half an hour and come back.
