"My name is Brandon Sarkis on behalf of Expert Village. Today I am going to be showing you how to make Gourmet French Fries fried in duck fat. What we are going to do is take the potato on the skinny side, the narrow side. We are going to cut it right in half and we are going to cut this part. What you are looking for is about a quarter to half inch slices. We are just going to take it and cut French fries out of it; little batons. They don't have to be perfect. They are French fries after all. If you want to cut wedges, feel free. I think the batons are a better way to cut them because you are going to get a truer French fries. One of the things important is to cut them all as best you can to same thickness and shape. Sometimes it's just not going to happen. Not much you can do about it because as you cook them, they will cook at different rates obviously. So there's our potatoes. I went ahead and cut them. As you can see, we've got some nice French fry shape here to deal with. I left the skin on mine. I like the skin on my French fries so let's move on to our next step which is rinsing them off. "
