"In this clip, we're going to talk about different types of fish, different types of seafood that we provide here at Waterstreet Seafood. This species in my hand here, this is a black grouper. We call it a black grouper. A lot of the newbie chefs will call this a gag grouper, g-a-g, we prefer to call it a black grouper. The old-timers and the people who have been doing this a little while, it's commonly known as a black grouper. Either one will work. It's one of the most common groupers in the Gulf of Mexico, one of the most sought after fish. It's a very common catch on our grouper providing boats. They catch these fish and other fish. This is about a ten pound fish. This is a very good specimen we're going to use here. It's a, it's a, I had the pick of the litter luckily. I've got a cooler full of these things and we're able to get the perfect size for e to cook. Okay, we're going to take two filets off of this fish and I'm going to show you how to do it."
