"Hi, this is Rich Buccola here in New York City and today on behalf of Expert Village, I'm going to show you how to make butternut squash compote. Alright, we set aside our apple and nut mix. We're going to take our butternut squash and we're going to get this ready for the oven. Alright, first thing I'm going to do is just cut off the end of my squash and cut off the other end and what we're going to do is peel it. Now you could use a peeler and you can see it will work. But sometimes you'll wind up messing up your peeler. So it's just better to use a paring knife and just slice very thin layer off the top. Alright, you see I have it peeled. Remember this isn't an easy thing to do, peeling a butternut squash. But take your time you'll find that it's easy to do. Look. Just using my paring knife, taking off all that skin, like so. What you do then, you see any little pieces again like up here, just get them off. What you do then is just cut it in half and be careful you don't cut yourself. Take your time. Alright, so you're going to cut it in half and you're going to see there's all seeds in here. What you want to do is take your paring knife and just get in here and cut this out and pull all of that out. Just with a spoon you might want to hollow out all of the insides here and get that all nice and clean. Alright, so we cleaned out our squash nice."
