"O'kay so we've finished cutting out the little crusts out of the puffed pastry. Puffed pastry is just so great during the holiday season and I will show you another recipe that uses it as well for some lovely pastry cheese straws. For the moment we want to finish these little mini quiches. Now these may not look like your typical ingredients for quiches but I assure you I made these for a Mother's Day brunch and it turned out just really nicely because I got the tart Granny Smith, and I have got some aged cheddar cheese that I have grated there. Really I did just a traditional brunch with some of my girlfriends and my friends said oh this is just so good it is such a treat to have because well it's so complicated I never make it myself. I said if you think it is complicated I assure you it really is not. The thing with quiche you can put pretty much whatever you like in it and I assure you it will be good. You can put vegetables of course, any meat you like, any seasonings, herbs, spices, and then there is just one last thing you have to know about completing the quiche and then you are completely free to go with your quiche. Add just a little pinch to these of course, just a little tiny bite of cheese. I will finish doing all of these and we will come back and finish with the filling."
