"I'm Stephanie Barnett on behalf of Expert Village and today we're going to make Christmas Cranberry Sauce. Oh, that smells good! This is a kumquat. It's an excellent fruit. It's a great source of vitamin C, and what's really great is you can eat the entire thing. It does have seeds in them, I don't recommend eating the seeds, but some people do. But you can eat the skin and all. And it has a lovely sweet and, almost sweet and bitter taste together. Now, let's prepare our kumquats. So, what I want you to do first is take off the very end, the tip of this kumquat. It has where it joined to the tree, and that you don't want in your cranberry sauce. So we're just going to cut that end off and we're going to get rid of that. And then I want you to cut thin slices. Now, there are seeds in this kumquat, so you have to watch for those. So I'm slicing down, there's some of the seeds. So let's remove the seeds. This is the most painstakingly part of this process is getting the seeds out, and you don't want the seeds in the cranberry sauce. This is going to be the hardest part of making the cranberry sauce is getting these seeds out, which is very hard. So, this sauce is very easy to make. So I've got all those seeds out. Now I'm just going to finish cutting this up. And I cut that in half and that in half, and that."
