It makes a light and airy frosting when you do that. You'll get a consistency like this which will make it light and fluffy and will work great for this recipe. What's great about the many steps in this yule log recipe is you can make a lot of these steps ahead of time and then just have them in the refrigerator. The chocolate mousse can be made days ahead, the marzipan decorations can be made days ahead. And you'll have all your pieces and all you'll need them for for your assembly on the day you make your dessert."
