"Hi. I'm Judy Brosco on behalf of Expert Village and now we're ready to roll our cake. And in this segment, I'm going to show you how to layer it with the mousse filling we made earlier and how to roll it out. So this is our cake after it's been cooled. We had it wrapped in plastic to keep it moist. We're going to take off our covering. Now I have the sponge layer on plastic. I prefer to roll it with the plastic. You can use parchment paper or you can use a kitchen towel. Whatever you're comfortable with. I like the plastic because I tend to store it right in the fridge right after. It's going to need to set. So we're going to put on our mousse filling that we made earlier. We're going to spread it around. Nice even thick layer. Now don't be afraid to roll the cake. It can be a little messy, but it'll be so worth it in the end. Want to have nice gooey, gooey filling. And some of it will squeeze out. You're going to use your plastic or your paper, whichever you're using, and lift up and fold the edge in. Using your paper, fold it over and fold it over again. Then tuck your paper in. Don't worry about all the ooey gooey. Keep it tucked in. Now we're going to lift it up onto a platter. Make sure you have your ends tucked in. And we're going to set this in the fridge to chill for an hour."
