"Hi. I'm Judy Brosco on behalf of Expert Village and this is part two of making a sponge cake. To finish our sponge cake batter, we're going to mix together our half a cup of flour and our quarter cup of corn starch. We're going to mix those together well and then we're going to take our egg white mixture and we're going to fold in thirds, again, using our same folding technique into the batter. Do another third. Fold in that and we'll finish with the remaining. This bakes for ten to twelve minutes in a four hundred degree oven. Do not over bake it or it'll be dry and might crack when you try to roll your cake. Take your prepared pan and try to spread it into an even layer. Goes in the oven for ten to twelve minutes. After ten or twelve minutes, remove the cake from the oven to cool on a wire rack. And then after it's cooled completely, cover it with plastic wrap until you're ready to assemble."
